Together with a unique recipe and cooking process, the selection of a tender sheep aged about three has contributed to the reputation of Dunhuang-style roast whole lamb.
The cuisine of the roast whole lamb has been incorporated with the special cooking methods and flavors of all ethnic people in Dunhuang. The specially selected lamb is expected to be barbecued for about two hours before it is presented to people.
The roasted whole lamb will be taken to the dining table with its legs kneeling on the ground. The host will then carve it for respectable guests, starting in its pectoral part, before presenting three cups of liquor, or Chinese baijiu, to them. This custom has the aim of wishing guests good fortune and a better life. After that, the others at the table will raise a toast to each other, before the host cuts slices of lamb for everyone else and invites them to jointly taste the delicious dish.
