Bubble Oil Cake
As a traditional folk snack of the Han ethnic people, it was given the name of bubble oil cake because its surface will swell with a yellow bubble during the frying process. It is made using flour, sugar, lard oil, peach kernels, seasame and rose.
The cuisine evolved from a court snack of the Tang Dynasty. It was difficult to find this special food at the market at that time because there were few people who could cook outside the royal palace.
To form the frothy bubble on the surface of the snack and add to its delicious taste, people have to have the correct composition of oil, water and flour, and have sound control of the oil's temperature, as well as the fire in the process of boiling, and the kneading of the dough and the frying of the cakes.
It has become a favorite food among tourists from home and abroad.
